Green Goddess Dressing (Kale, Basil & Avocado)

Ingredients

1/2 avocado

1/4 cup curly kale, chopped

1/4 cup fresh basil leaves

1/4 cup Greek yogurt (or coconut yogurt)

1 garlic clove

Juice of 1 lemon

2 tbsp olive oil Salt and pepper to taste

Preparation

Combine all ingredients in a blender or food processor.

Blend until smooth and creamy.

Add water 1 tbsp at a time to thin, if needed. Store in fridge for up to 3 days.
