Ingredients
2 chicken breasts, pounded thin
1 cup fresh basil leaves
1/2 cup fresh mint leaves
1/4 cup olive oil
1/4 cup sunflower seeds (or pine nuts)
1 garlic clove
Juice of 1 lemon Salt and pepper to taste
Preparation

Grill chicken over medium heat for 6–8 minutes per side or until cooked through.
Combine basil, mint, seeds, garlic, lemon juice, and olive oil in a food processor.
Blend until smooth, adding more oil if needed. Serve pesto over grilled chicken.
