Ingredients

6 rice paper wrappers
1 cup Emerald lettuce, torn into strips
1/2 cup cooked rice noodles or quinoa
1/4 cup shredded carrots
1/4 cup cucumber matchsticks
2 tbsp fresh mint leaves
2 tbsp fresh basil leaves
Optional: tofu strips or shrimp
For dipping: low-sodium tamari or almond butter sauce

Preparation

1. Soak one rice paper wrapper in warm water for 10–15 seconds.

2. Lay the softened wrapper on a clean surface.

3. Add a small amount of lettuce, noodles, carrots, cucumber, herbs, and protein.

4. Fold in the sides and roll tightly to seal.

5. Repeat with remaining wrappers and fillings. 6. Serve with tamari or almond butter dipping sauce.
