Ingredients
2 chicken breasts, pounded thin
1 cup fresh basil leaves
1/2 cup fresh mint leaves
1/4 cup olive oil
1/4 cup sunflower seeds (or pine nuts)
1 garlic clove
Juice of 1 lemon Salt and pepper to taste
Preparation
- Season chicken breasts with salt and pepper,
- Grill chicken over medium heat for 6–8 minutes per side or until cooked through.
- Combine basil, mint, seeds, garlic, lemon juice, and olive oil in a food processor.
- Blend until smooth, adding more oil if needed. Serve pesto over grilled chicken.
