Ingredients
2 cups cubed watermelon
1/2 cucumber, sliced
1/4 cup fresh basil leaves, torn
2 tbsp fresh mint, chopped
Juice of 1 lime
1 tbsp olive oil Optional: 1/4 cup crumbled feta
Preparation
In a large bowl, combine watermelon, cucumber, basil, and mint.
Whisk lime juice and olive oil together.
Drizzle dressing over the salad and toss gently. Top with feta if using and serve chilled.
