Ingredients

1 head Emerald lettuce, torn

1 orange, peeled and sliced

1/2 avocado, sliced

1/4 small red onion, thinly sliced

2 tbsp olive oil

1 tbsp fresh mint, chopped

1 tbsp lemon juice Salt and pepper to taste

Preparation

Whisk olive oil, mint, lemon juice, salt, and pepper to make vinaigrette.

In a bowl, combine lettuce, orange, avocado, and red onion. Drizzle with vinaigrette just before serving.
